I can sum this up with one word... YUM!!! Here is my carbohydrate option for post-workout (and the occasional snack):
Ingredients
- sweet potatoes
- coconut oil
- cinnamon
Instructions
- Preheat an oven to 375 degrees Fahrenheit
- Toss the sweet potatoes in the oven unpeeled
- Bake for about an hour or until a knife or fork can go through the potato
- Let it cool (this is important because I learned the hard way)
- Peel the skin off the potato and cut whatever you can't peel off (you'll see how easy it is to pull the skin right off)
- Slice the potato which ever way you desire
- Melt coconut oil and baste the sweet potato (don't be shy with the oil either)
- Sprinkle with as much cinnamon you want
- Bake for 20-25 minutes (depending on how crispy you want them)
