Sweet Potato


I can sum this up with one word... YUM!!! Here is my carbohydrate option for post-workout (and the occasional snack):


Ingredients
  • sweet potatoes
  • coconut oil
  • cinnamon
Instructions
  1. Preheat an oven to 375 degrees Fahrenheit
  2. Toss the sweet potatoes in the oven unpeeled
  3. Bake for about an hour or until a knife or fork can go through the potato
  4. Let it cool (this is important because I learned the hard way)
  5. Peel the skin off the potato and cut whatever you can't peel off (you'll see how easy it is to pull the skin right off)
  6. Slice the potato which ever way you desire
  7. Melt coconut oil and baste the sweet potato (don't be shy with the oil either)
  8. Sprinkle with as much cinnamon you want
  9. Bake for 20-25 minutes (depending on how crispy you want them)
