Agave "Nectar"

There has been quite a bit of talk around CFK concerning agave "nectar" and all this Paleo/Primal cooking and baking that has been happening over Thanksgiving weekend.

As well, from speaking with a number of you and checking out what you have been eating, there have been too many Paleo/Primal desserts and treats being consumed. Just because they are not made of grains or gluten-containing products doesn't mean you can gorge yourselves with them. Coconut flour, pie fillings, etc are still carbohydrates and will affect you blood sugar and insulin levels. This is what we are trying to control with this dietary lifestyle change.

In addition to what was mentioned above, a lot of you are not eating balanced meals. You need to eat protein, carbohydrates, and fat with EVERY meal and snack. If worse comes to worse it is best to just eat fat for a snack rather than just protein and especially just carbohydrates. Even though protein stimulates the release of a hormone known as glucagon, insulin (in a small amount) is still released. And when carbohydrates are consumed, only insulin is released. Fat is hormonally neutral and provides a huge source of energy.

Can you give us examples of fat?

I don't think you want us to chew on pork rinds but I am having trouble thinking of good sources of fat.

Can you also give us an example of a "balance meal" for any given day?

As said in the article using all of these sourses (honey, syrup and Agave) are fine in moderation..which is how they are hopefully being used.
However, in a few articles and with some research I have done, I have found that the insulin response in my body when comsuming honey or syrup is much greater then when consuming agave. So, thats why i like to sue it in some baking. After reading Robb Wolf's book I have also come to the conclusion that what we eat is extreamly important, however; does not need to be turned into a religion. So agave in small quantities I think is a good resourse when doing the paleo diet:)

Jessi... I totally agree with you. The sweeteners are fine if used in moderation. The majority of people have a good understanding on how sugar (glucose) works and don't know too much about fructose. And you are absolutely correct that you would get a larger insulin response consuming something like honey or maple syrup over agave. Honey and maple syrup don't need to be broken down like fructose does. BUT... Agave is missing a lot of nutrients that you would normally find in maple syrup and honey. That is one of the main reasons why I would choose those sweeteners over agave.

Dan... I don't know if you have checked out the attachment with foods to avoid and focus on. There is a long list of nuts and seeds that are suitable for consumption. The main nuts to focus on would be macadamia, walnuts, Brazil, almonds in moderation.

Coconut (excellent source of energy!!!)

Cooking oils or oils for drizzling on food - coconut, extra virgin olive oil, macadamia nut oil (hard to find and expensive), walnut oil (expensive)

Anonymous... I'll post what I had on the first day of the challenge.

Breakfast - 5 egg omelet with mushrooms in olive oil, apple, and a handful of macadamia nuts

Snack - few pecans and macadamia nuts (to curb that hunger grumble in my belly) *NOTICE ONLY FAT*

Lunch - Chicken breast, mixed frozen berries (strawberries, blueberries), Brazil nuts, walnuts

Pre-WOD meal - 1/2 chicken breast, 8 macadamia nuts

Post-WOD meal - protein shake (approx 40g PRO) with 1 cup of whole milk (10-12g carbs)

Dinner - chicken breast seasoned with curry, big handful of raw spinach, 1/2 yellow bell pepper, 1/3 cucumber peeled, 2 celery sticks, mix of pecans, macadamia nuts and walnuts.

Snack - 1/2 chicken breast seasoned with curry, Granny smith apple, pecans & macadamia nuts

Fish oil taken with meals and water consumed throughout the day.

Dawson - My engineering brain did not connect nuts with fat. I had gone through the list of foods but for some reason I didn't think nuts contained fat.

I have been trying to keep a good balance of nuts and vegetables in order to get all those nutrients.
