Paleo Shepherd's Pie


I haven't had this dish in 10+ years since living with my parents in Ottawa. I remember eating it with peas and corn with white potatoes. Then lathering it with ketchup. Mmmmmmm... But today, the ingredients in this recipe differ from the traditional Shepherd's Pie because I wanted it to be Paleo.

Ingredients

  • 1 large and 1 medium sweet potato
  • 3 carrots diced
  • 1 head broccoli
  • 3/4 medium onion diced
  • 2 cloves garlic
  • 1 pound ground beef
  • 2 - 3 Tbsp coconut oil
  • 2 Tbsp olive oil
  • salt and pepper to taste
  • 2 Tbsp coconut milk
Instructions
  1. Peel sweet potatoes and place in pot of boiling water.
  2. Preheat oven to 375 degrees Fahrenheit.
  3. Steam broccoli and carrots until carrots slightly soft.
  4. Melt coconut oil in pot and put broccoli, carrots, and onions and sauté until onions opaque.
  5. In another pot, heat olive oil then cook ground beef with garlic, salt, and pepper.
  6. When beef almost cooked add broccoli, carrots, and onions.
  7. Mash sweet potatoes with coconut milk until smooth consistency.
  8. Place beef mixture in baking dish then top with sweet potato.
  9. Bake for 20 - 30 minutes then broil for another 6 - 8 minutes. Keep an eye on the potatoes so they don't burn.

It is encouraged post-WOD but you can eat it in moderation during a meal.
